This recipe is my take on an indulgent yet wholesome main: seasoned chicken breast served alongside golden potato swirls, garnished with fresh coriander and a tangy tomato relish. For the Potato Swirls
3–4 medium potatoes, peeled
1 egg yolk
1 tbsp light cream
1 tbsp olive oil or butter
Salt & pepper to taste
Fresh parsley or chives (optional, for extra flavor)
For the Chicken
2 chicken breasts
1 tsp paprika
1 tsp garlic powder
1 tbsp olive oil
Pinch of chili flakes (optional)
Salt & pepper to taste
For the Tomato Relish
200 g chopped tomatoes (fresh or canned)
1 small onion, finely diced
1 garlic clove, minced
1 tsp olive oil
1 tsp honey or brown sugar (to balance acidity)
Salt & pepper
Garnish
Fresh coriander leaves
Method
Potato Swirls
Boil potatoes until tender, then mash until smooth.
Stir in egg yolk, cream, butter/olive oil, salt, pepper, and herbs.
Spoon into a piping bag fitted with a star nozzle and pipe swirls onto a lined baking tray.
Bake at 200°C (400°F) for 15–20 minutes, or until golden on the edges.
Chicken
Rub chicken breasts with paprika, garlic powder, chili flakes, salt, and pepper.
Heat olive oil in a pan and sear chicken until golden on both sides, then cook through (juicy but fully done).
Rest for 2–3 minutes before slicing.
Tomato Relish
Sauté onion and garlic in olive oil until soft.
Add tomatoes, honey/sugar, salt, and pepper.
Simmer gently until thickened into a relish-like sauce.
Assembly
Arrange golden potato swirls on a plate.
Place sliced, seasoned chicken alongside.
Add a small dish of tomato relish or drizzle on the plate.
Scatter with fresh coriander leaves for color and freshness
