Lately, I’ve found joy in recreating restaurant-style meals at home with flavours I love, ingredients I trust, and the comfort of my own space. Today’s 3-course menu was simple, fresh, and full of flavour. Here’s a little peek into what I made:
Starter – Korean Chicken Lettuce Wraps
A light and vibrant start to the meal.
Pan-fry small strips of chicken breast with garlic, a splash of soy sauce, gochujang paste, honey and sesame oil.
Serve in crisp lettuce leaves.
Top with sliced cucumber, toasted sesame seeds and a squeeze of lime.
Add a side of sweet chilli dipping sauce if you like a little extra kick.
Main – Thai Pineapple Fried Rice
Sweet, savoury and beautifully presented in a pineapple bowl.
Lightly sauté prawns and set aside
In the same pan, stir-fry diced onions, garlic, carrots, and peas
Add cooked coconut rice, a splash of soy sauce, fish sauce and a touch of curry powder.
Toss in fresh pineapple chunks and cooked prawns.
Garnish with spring onions, chopped cashews or plantain for a delicious topping finish.
Dessert – Strawberry Mousse with Shortbread Crumbs
Creamy, dreamy, and perfect to end the night
Whip together fresh strawberries, double cream, a touch of icing sugar and vanilla extract until smooth and airy.
Layer over a bed of crumbled homemade shortbread (or any biscuit you love).
Chill until set and top with fresh sliced strawberries and a drizzle of syrup.
